Small Batch Banana Cinnamon Sugar Muffins

These small batch banana cinnamon sugar muffins are not only easy to make, they are flavorful and airy in texture. Since it’s only my husband and I at home, we don’t need an entire dozen of muffins sitting around, although, I am sure we could eat them all no problem.

This recipe only requires basic ingredients that I am sure you already have in your pantry arsenal. Also, this recipe only requires 1 small bowl and 1 fork for prep, less dishes to clean, YAY!

What will you need for your muffins?

You will need the basics, flour, sugars, and of course a ripe banana. This recipe doesn't have much added sugar since the ripe banana will lend a fair amount of sweetness on its own.

For the Muffins

  • 1/2 cup all purpose flour

  • 1 room temp egg

  • 4 tablespoons unsalted butter

  • 1 tsp baking soda

  • 1/2 tsp vanilla extract

  • 1 ripe banana

  • 1/4 cup brown sugar

  • 1/4 teaspoon salt

For the Cinnamon Topping

  • Super simple; in a small bowl, use a fork to mix 2 tablespoons brown sugar with 1 tsp cinnamon! That’s it, seriously!

Directions

  1. Preheat your oven to 400 degrees and line your muffin tin with 6 muffin liners. This recipe yields half a dozen beautiful banana muffins. If you want your muffins larger, fill 4 muffin tin spots to the top instead of the 6 spots halfway.

  2. Start with incorporating your wet ingredients in a small mixing bowl. Use a fork to smash your banana before adding in your brown sugar, egg, vanilla extract and melted butter. Whisk everything together with your fork.

  3. Start to add in your flour, baking soda and salt. Whisk together until combined. It’s ok if you see some clumps, it'll all work out!

  4. Fill your muffin tins 1/2 way if you are making 6, and all the way if you want 4 bigger muffins.

  5. Sprinkle your cinnamon sugar mix on top of each muffin, be generous since this makes these muffins so incredibly irresistible!

  6. Bake the muffins at 400 degrees for ONLY FIVE MINUTES. Then turn down the heat to 350 for the last 10 minutes. These muffins bake FAST. Test your muffins with a toothpick and if it comes out clean from the center, you’re all set.

  7. Allow your muffins to sit in the muffin tin for 5 minutes before removing onto a wire cooling rack. Enjoy with a slather of salted butter or a nut butter of your choosing!
