Small Batch Mini Banana Muffins

Look no further, these mini banana muffins are a super simple and easy way to get your toddler or little one to eat and out the door before school or sports.
This recipe yields 12 small mini muffins but you can always double it for a larger batch to get you through the week. For me and my toddler, this is a nice little weekend addition to breakfast or a great post-nap snack.
What You Will Need
The ingredients are most likely already in your fridge or pantry since they are staples in most homes.
1/4 cup melted unsalted butter
1 egg room temp
1 tbsp sour cream or plain yogurt
1 tsp vanilla
1/2 a ripe banana
1/4 cup + 1 tablespoon flour
1/8 tsp baking soda
1/4 tsp baking powder
1/8 tsp salt
1/4 cup mini chocolate chips {optionally}
Directions
Preheat your oven to 350 and line your mini muffin tray making sure to space your liners apart.
In a heat safe bowl, melt your butter. Add in your maple syrup, sour cream or yogurt, egg and banana and mash until well combined.
Add in your dry ingredients and fold until no streaks of flour remain.
Add in your chocolate chips if desired.
Bake for 12-13 minutes, allow to cool on a cooling rack before storing in an airtight container on the counter for up to 3 days.
