Spicy Peanut Butter Noodles With Hot Honey
Looking for a super simple and refreshing salad that has some spice to it? This easy noodle salad with spicy peanut sauce and crunchy veggies will be the perfect side to any summer BBQ or beach day lunch.
What Makes This Salad Refreshing if it’s Spicy?
Well, this dish is best served chilled straight from the fridge or beach cooler. The flavors of the spicy peanut sauce marinate the noodles and when kept in the fridge overnight before eating, your veggies stay crunchy and fresh.
You can totally dial down the spice levels if you want and use less sriracha or regular honey instead of hot honey, but if you love a little kick to your food, this recipe is the one for you.
What You’ll Need For Your Spicy Noodle Salad
Peanut butter, I use creamy but you can totally use crunchy or even swap for almond butter if you prefer.
Sriracha, this is what will help boost those spice flavors in your dish. But add more or less depending on your heat tolerance.
Hot honey! I use Mikes Hot Honey and I love it. It’s not that spicy but it still has a bit of a spicy/sweet balance. Use regular honey or even agave if that’s your preference.
Veggies, now this can be sliced cabbage, shredded carrots, green onion or even sliced jalapeños. Get creative with it!
Soy sauce, rice vinegar, sesame oil, all essential Asian based ingredients that make this noodle dish so darn delicious.
Lime, an extra squeeze of fresh lime brightens up the spicy peanut sauce and lends a subtle citrus note to your noodles.
Ingredients for Spicy Peanut Noodle Salad
1 17 oz package of spaghetti noodles cooked to package directions
3 tablespoons creamy peanut butter
1 tablespoon hot honey
2 tablespoons sesame oil
2 tablespoons rice vinegar
2 cloves grated garlic
1 small knob of ginger grated
2 tablespoons sriracha
1 tablespoon lime juice
4 tablespoons soy sauce
1 cup shredded purple cabbage
2 stalks green onion finely chopped
1/3 cup chopped cilantro
sesame seeds for garnish when ready to eat
How to Assemble Your Noodle Salad
1. Cook your noodles according to package directions.
2. While noodles cook, assemble your peanut sauce dressing.
3. Take noodles and drain them, immediately coat with peanut sauce.
4. Allow noodles to cool for a bit before mixing in a large bowl with your chopped veggies.
5. Serve with sesame seeds sprinkled on top or add some extra sriracha if you want more heat!
How to Store Leftovers
Make sure to leave your noodles in the fridge in an airtight container for up to 4 days. The longer your sauce marinates your noodles, the more flavor will develop.
However, I don’t recommend letting the noodles sit in the fridge for more than 3-4 days because the veggies can start to loose their signature crunch.
